- Make the Energy Bites (can be done 2 days ahead): In a medium bowl, combine oats, peanut butter, honey, chocolate chips, flaxseed, vanilla, and salt. Mix until fully incorporated. Cover and refrigerate for 30 minutes. Roll mixture into tablespoon-sized balls. Roll in optional coatings if desired. Place on a tray and refrigerate for 1 hour to set before serving.
- Prep for Kabobs & Dip (Morning of): Whisk together Greek yogurt, honey, and vanilla for the dip. Cover and refrigerate. Hull strawberries, cut pineapple and apple into chunks, segment the orange, and cube the cheese. Toss apple in lemon juice. Store each fruit and the cheese in separate airtight containers in the fridge.
- Prepare Pizza Swirls (2 hours before, bake 45 mins before serving): Unfold puff pastry on a floured surface and roll gently to smooth. Spread pizza sauce evenly, leaving a small border at one short edge. Sprinkle with mozzarella, optional pepperoni, and Italian seasoning. Tightly roll from the opposite side into a log, sealing with the clean edge. Wrap in plastic wrap and freeze for 15-20 minutes.
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Unwrap the log and slice into 1/2-inch rounds with a serrated knife. Place cut-side down on the sheet. Insert a lollipop stick into the side of each swirl. Sprinkle with Parmesan cheese.
- Bake pizza swirls for 12-15 minutes until puffed and golden. Let cool for a few minutes before serving.
- Final Assembly (45 minutes before party): Assemble kabobs by threading fruits and cheese onto skewers in colorful patterns. Arrange kabobs on a platter with the bowl of yogurt dip. Place energy bites on a serving plate. Serve pizza pops warm.
