Ingredients
  

  • 1 pint cherry or grape tomatoes
  • 8 oz fresh mozzarella balls ciliegine size
  • 1 large bunch fresh basil
  • 24-30 small wooden skewers or toothpicks
  • 1/2 cup balsamic vinegar
  • 1 tbsp honey or brown sugar
  • Flaky sea salt for garnish, optional
  • Black pepper for garnish, optional

Method
 

  1. Make the Balsamic Glaze: In a small saucepan, combine the balsamic vinegar and honey (or brown sugar). Bring to a simmer over medium heat, then reduce to low. Let it cook for 8-10 minutes, stirring occasionally, until reduced by about half and thick enough to coat the back of a spoon. Remove from heat and set aside to cool and thicken further.
  2. Prepare Components: Wash and thoroughly dry the cherry tomatoes and fresh basil leaves.
  3. Assemble Skewers: On each wooden skewer or toothpick, thread one cherry tomato, followed by one small basil leaf (fold it if it's large), and finish with one mozzarella ball.
  4. Arrange and Finish: Arrange the assembled skewers on a serving platter. Just before serving, drizzle the cooled balsamic glaze lightly over the skewers. For extra flavor, garnish with a sprinkle of flaky sea salt and a crack of black pepper.

Notes

For the best presentation, assemble the skewers close to serving time to keep the basil fresh. The balsamic glaze can be made up to a week ahead and stored in the refrigerator. For variations, try using bocconcini mozzarella or adding a slice of salami or a small olive to the skewer. To make ahead, prepare the components separately and assemble just before the party.
