  • 1 cup pineapple chunks
  • 1 cup cantaloupe or melon balls
  • 1 cup green grapes
  • 1 cup blueberries
  • For Secret-Ingredient Yogurt Dip: 1 cup plain Greek yogurt
  • 2 tablespoons honey or maple syrup
  • 1/4 cup smooth peanut butter or sun butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • Mini chocolate chips or sprinkles for garnish
  • For Mini Sandwich Wheels: 8 slices soft white or whole-wheat sandwich bread
  • 1/4 cup cream cheese, hummus, or mashed avocado
  • 4 slices deli turkey or ham
  • 4 slices cheddar or mozzarella cheese
  • 1/2 cucumber, cut into thin sticks
  • For Serving & Dipping Optional
  • 1 cup bell pepper strips
  • 1 cup cherry tomatoes
  • 1 cup pretzel rods

Equipment

  • Mixing bowls
  • Whisk
  • Sharp knife
  • Cutting board
  • Rolling pin
  • Blunt-ended skewers or toothpicks
  • Serving platters and bowls
  • Tall glasses for display
  • Measuring cups and spoons

Method

  1. Prepare the Rainbow Fruit Wands: Wash and thoroughly dry all fruit. Cut larger fruits like strawberries, pineapple, and melon into 1-inch bite-sized pieces.
  2. Arrange the cut fruit in color order (red, orange, yellow, green, blue/purple) for easy assembly.
  3. Carefully thread the fruit onto blunt-ended skewers in rainbow order, leaving 1.5 inches at the bottom as a handle. Arrange standing up in a glass or lying flat on a platter.
  4. Make the Yogurt Dip: In a medium bowl, combine 1 cup Greek yogurt and 2 tablespoons honey or maple syrup. Whisk until smooth.
  5. Add 1/4 cup peanut butter (or sun butter), 1 teaspoon vanilla extract, and 1/4 teaspoon cinnamon. Whisk again until fully combined and creamy.
  6. Cover the bowl and refrigerate for at least 30 minutes. Before serving, transfer to a serving bowl and garnish with mini chocolate chips or sprinkles.
  7. Prepare the Mini Sandwich Wheels: Lay slices of bread on a cutting board and gently flatten them with a rolling pin to prevent cracking.
  8. Spread a thin, even layer of cream cheese, hummus, or mashed avocado over each slice of bread.
  9. Place a single layer of your chosen filling (a slice of turkey, cheese, or a few cucumber sticks) along one edge of the bread.
  10. Tightly roll the bread from the filling edge into a log. Use a sharp knife to slice each log into 1-inch thick 'wheels'. Secure with a toothpick if needed, and warn parents about them.
  11. Assemble the Party Platter: Arrange the Rainbow Fruit Wands, Mini Sandwich Wheels, and a bowl of Yogurt Dip on a large platter. Add bowls of extra veggies and pretzels for dipping around the main items. Serve immediately.

Notes

For allergies, always use sun butter instead of peanut butter and check all labels. The fruit wands and sandwich wheels can be assembled up to 2 hours ahead; cover and refrigerate. The yogurt dip can be made 1 day ahead. For younger children, consider using bendy straws or licorice strings instead of skewers for the fruit. Always remove toothpicks before serving to very young kids. A 'build-your-own' station with toppings encourages kids to customize their food.
