Baked Brie with Hot Honey & Rosemary

Ingredients
  

  • 1/3 cup honey
  • 1 teaspoon red pepper flakes
  • 2 sprigs fresh rosemary, plus more for garnish
  • 1 sheet puff pastry optional
  • Assorted crackers for serving
  • Apple slices for serving

Method
 

  1. Preheat oven to 350°F (175°C).
  2. If using puff pastry, roll it out slightly. Place the Brie in the center and fold the pastry up over the cheese, trimming any excess. Flip it over so the seam is on the bottom and place on a parchment-lined baking sheet. If not using pastry, simply place the Brie in a small, oven-safe dish.
  3. In a small saucepan over low heat, combine honey, red pepper flakes, and rosemary sprigs. Warm gently for 5 minutes to infuse the flavors, then remove the rosemary sprigs.
  4. Bake the Brie: If wrapped in pastry, bake for 25-30 minutes until golden brown. If baking without pastry, bake for 15-20 minutes until the cheese is soft to the touch.
  5. Remove from the oven and immediately drizzle the hot honey generously over the top. Garnish with additional fresh rosemary.
  6. Serve immediately while warm and gooey with assorted crackers and apple slices.

Notes

For a simpler version, bake the Brie without the puff pastry 'en croute'—it's just as delicious. The hot honey can be made ahead and gently reheated. Adjust the red pepper flakes to control the spice level. Leftovers (if any) can be stored covered in the refrigerator for up to 2 days and reheated gently in the microwave.
